I got my meals done for my upcoming busy weekend. These will either be lunch or dinner depending on the shift I am working that day.
Ingredients: (all Organic brand from Safeway - whether I completely believe that is another story, but I am doing my best with the hand I am currently dealt)
Stewed tomatoes, garbanzo beans, kidney beans, cannellini beans, chunk tuna (late addition to this batch), lentils. wild rice, quinoa, random spices.
Each individual meal has spinach, tofu and parmesan cheese added as well. Bachelor cooking at it finest: put a bunch of stuff in a pot and let it simmer. Separate the large batch into meals to eat later :)
